French Puffs Recipe

French puffs are simple and easy to prepare with just enough flavor to make them fabulous. I've been making these as mini french puffs for about fifteen years. This french puff recipe is perfect to make for a breakfast with friends.

The original recipe needed just a few adjustments. It came from a spiral-bound church recipe book called More Tasty Recipes. It definitely has some keepers in it.

Don't let the simplicity of this recipe deceive you.

Mini French Puff Recipe

1/3 cup butter, softened, 
1/2 cup sugar
1 egg
1 1/2 cup flour 
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 cup milk

Topping
1/4 cup sugar
1/2 teaspoon cinnamon
1/4 cup butter, melted

1. Preheat oven to 350°. Grease mini muffin tin.
2. Cream together butter and sugar. Add egg and mix. Add flour, powder, salt, and nutmeg and mix. Scrape sides of the bowl.
3. Slowly add the milk and mix well.
4. Drop from a teaspoon into muffin tin. Fill each about half-full. Bake for 13-17 minutes. 
5. Remove from oven when slightly browned. Carefully remove from muffin tin.
6. Combine the sugar and cinnamon for the topping. 
7. Dip the tops of the mini french puff in the melted butter. Roll in the sugar mixture. Best served warm.

Additional options:

  • I prefer these as mini muffins because they are a bit dense, almost doughnut-like. However, if you would prefer to make them as a standard french puff, use regular muffin tins and bake for about twenty minutes.
  • Double the ingredients if you want to cover the entire muffin in the sugar mixture. I find dipping the top is perfect, but thought it was worth mentioning.
