Peanut Butter Ice Cream Topping Recipe

It was a Saturday afternoon.  I had been sick all week and the children had been home all week from school due to the Winter That Would Not End.   My husband and I were watching a bit of the Olympics while reading our books.  He looked up and suggested that we (meaning I) try making homemade peanut butter ice cream topping sometime.  
Knowing that he had recently purchased a five quart tub of fudge swirl ice cream, (to replace the other that we had had since Birthday Week in October), I had not baked in a week, AND I was feeling better...motivated me to seek out a recipe.  

I found these this recipe, and decided a bit of vanilla might help it along.  Oh, boy.  It smelled like peanut butter no-bakes  as I was making it.  It tastes even better!  Mmm...good!  (Apparently I have not shared my no-bake recipe here; the link is to my old blog.)

This peanut butter sauce can used to dip fruit or anything else.  You don't have to limit it to ice cream.

Peanut Butter Sauce
1 cup brown sugar, packed
1/2 cup light corn syrup
3 tablespoons butter
1/8 teaspoon salt
1/2 cup evaporated milk
1 cup peanut butter
1/2 teaspoon vanilla

Place brown sugar, corn syrup, butter, evaporated milk, and salt in a pan.  Mix together over medium heat.  Bring to boil and then remove from heat.  Stir in peanut butter and vanilla.

Let cool for five minutes before drizzling over ice cream.  

Store in an air-tight container in the refrigerator.  Reheat quantities as needed at 70% heat in a microwave safe bowl.  (Probably about 30 seconds for a half cup, but check frequently. 
With your leftover evaporated milk, you can make fudge the next day!  (Why yes, I did!)

Want to know a little known and slightly embarrassing  fact about me?  When I was a small child (three or four?) I would sneak into the refrigerator to drink evaporated milk straight from the can.  My parents used it in their coffee.  The thought of it grosses me out now, but apparently I thought it was a tasty treat.

For this recipe and others that require a large amount of peanut butter as the main ingredient, be sure to use a quality brand.  We prefer Jif.

  1. My dad always used evaporated milk in his coffee, too! Although I can't say I drank it straight from the can, we did enjoy it over blueberries for a treat!

  2. I used Carnation cream in my coffe too, also put in oatmeal, cereal, & hot chocolate.

  9. My husband drinks evaporated milk from the can all the time.. or adds condensed milk to it. He grew up on evaporated milk as lived in frica with no electricity. This recipe sounds awesome and I will be trying it soon.
