What's for Dinner in February

This year I am purposely planning each month's meals in advance.  Some readers showed interest, so I'm sharing it each month, too.  When a recipe is on the web, I link to it.  However, almost all of my recipes are typed, so if you are interested in a recipe, feel free to leave a comment or email me to request it.  I blog because I like to share.  :)

Often the meals I prepare for our evening meal provide our family with at least a full second dinner, too.  Thankfully, my husband does not mind eating the same thing two nights in a row.  Because we have three young children in the home who are very hungry upon arriving home from church, we either have easy leftovers or sandwiches for the Sunday noon meal.  (If we have overnight company, I do prepare a Sunday "dinner" for the meal.) For various reasons, Sunday's evening meal is pretty low key.  We typically have oatmeal or even cereal.  Sometimes my husband will eat leftovers, but he usually prepares it himself.  
Week 1
Ham and Egg Casserole (using this recipe and adjusting it)
Grilled Ham and Cheese
Meatloaf (made with boxed stuffing, but I adjust the recipe)
Ham and Egg Wrap
Cheeseburgers with Cheesy Bacon Potato Rounds

Week 2
Ham Steak 
Fettuccine Alfredo for ♥Valentine's Day♥
Dinners for Eight- Will provide one hour dinner rolls or a dessert. (I hope.)
Potato Soup

Week 3
Macaroni and Ham
Pork Roast (How do you make your pork roasts?  Any thoughts?  I've done it before, but am not typically satisfied.)

Week 4
Quesadilla

Do you make a special Valentine's Day dinner?  My husband has always preferred that to going out.  I am not certain what dessert I'll make for that, but I will make something that the family will enjoy.

Did you notice the large amounts of ham we'll be eating in February?  We recently bought a good deal of pork from our neighbor.  We have lots of leftover ham in the freezer, plus ham steaks and more to prepare for meals.

  1. I've never made chicken and dumplings. Come to think of it, I don't know that anyone in my family other than myself has ever had it. It IS a yummy dish!
