Peanut Butter Banana Chocolate Chip Muffins

I enjoy sweets.  A lot.  But the reality is that I shouldn't eat them all the time, nor should my children.  These muffins allow for me to have just enough sweetness that they are a treat, while still remaining fairly healthy.  I make these as mini muffins and heart-shaped muffins.  Both sizes are appropriate for a child-sized snack!  Shonda had made a loaf of bread that I simply adapted for the muffins.
Peanut Butter Banana Chocolate Chip Muffins
3-4 ripe bananas, mushed
1/2 cup peanut butter
1/2 cup sugar
1/2 cup milk 
2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoons baking soda
1 cup mini chocolate chips

Preheat oven to 350°.  Mix together bananas, peanut butter, sugar, and milk.  Add in flour, powder, and soda.  Stir in chips.  Prepare pans with cooking spray or oil.  Pour into prepared pan(s).   

Bake mini muffins or heart-shaped muffins for approximately 15 minutes.  Bake loaf for 45-50 minutes and regular muffins for 15-18 minutes.

Wilton makes a heart woopie pie tin which makes the muffins only about an inch thick, which is great for a quick snack.

  1. YUM! These look amazing. I just bought bananas today, so I will have to try them out. Also a quick tip... if you don't have the heart shaped pan, you can use muffin cups, and put a small ball of tin foil between the paper and pan to create s heart shape. It won't be as pretty as the heart pan, but it still turns out cute!

    I have seen heart muffins made in the regular pan, and I think they looked cute. I once made my eldest brownies for her class birthday treat. To make them a bit cuter, I had a heart paper that I used to cover some of the brownie, and then sprinkled powdered sugar around it. She was pleased, but then again, children usually are!
