Biscuits: Simple and Delicious

I do try to serve a starch with each meal, and I am a sucker for bread.  Biscuits are pretty awesome, too.  It took me years to find a recipe that satisfied me.  I wanted a biscuit that would rise and split like they do in the restaurants.  (The picture below doesn't show my best biscuits...)  I've been using this buttermilk biscuit recipe for a couple years now...the thing is, I have never purchased buttermilk.  I make it in a jiffy, as seen below.  I bet these would be even better with the real thing!

I typically double this recipe so I can have biscuits with dinner and then use the leftovers for an egg and bacon sandwich the next day.  They also freeze nicely.


Biscuits
2 1/4 cups Bisquick mix      
2/3 cup buttermilk*
1 teaspoon sugar                   
1 tablespoon butter, melted     
melted butter for brushing

Mix Bisquick, buttermilk, and sugar together by hand.  Add the melted butter and stir until a soft dough has formed.  Turn dough onto a well-floured surface.  Add additional flour, if needed.  Knead 20 times. 

Pat ½ inch or thicker.  Cut using a knife, floured biscuit cutter, or floured drinking glass.  Place close together on parchment paper.  Brush tops with melted butter. 

Bake at 450° for 8-10 minutes or until nicely browned.  Brush tops again with butter and serve warm.

* Homemade Buttermilk: To make 2/3 cup buttermilk, place 2 teaspoons of lemon juice or vinegar in liquid measuring cup. Then add milk to the 2/3 cup line.

  1. YUM. I love biscuits! But you already have our whole family hooked on granola bars so I'm a little afraid to touch another of your recipes... :D
