Sweet Potato Fries

For years my older sister mentioned how she really likes to eat sweet potato fries.  I never thought too much of it until Little Sister (now 11 months) wanted to eat food.  Real food.  Not baby food.  A friend recommended sweet potatoes because of their nutritional benefits for Little Sister.  I had never prepared them and never thought to pick them up in the produce aisle.

Then this past summer when we were traveling north for a wedding, we had to stop for dinner.  Sweet potato fries were on the menu.  I thoroughly enjoyed them.  And now I have made them a few times for my family.  All three children even like them-GASP!  (My husband likes to save his sweets for dessert.  Just as he does not prefer apples mixed with pork chops, he does not prefer sweet potatoes as part of the main meal.  So now I make them when he isn't around.)
I adapted this recipe to create my own version of sweet potato fries.  If you have never had them I'd suggest giving them a try!

Sweet Potato Fries
2 sweet potatoes
2 T olive oil
2-3 T Parmesan cheese
salt and pepper to taste

Wash and peel sweet potatoes and slice them into fries of approximately the same size.   Place in a bowl and drizzle with oil.  Stir to coat well.  Mix in cheese and seasoning.  Place on  cookie sheet or 9x13 pan in a single layer.

Bake at 425° for 25-30 minutes, flipping at least once while baking.

  1. Yours look REALLY delicious. Mine come out tasting ok and we like them - but yours look like they have a bit more yummy to them. :) I'll have to remember your recipe here next time I make them.
