Chocolate Peanut Butter Oatmeal Bar Recipe

I've been on the look-out for oatmeal based treats for a while now.  This combines oatmeal, chocolate and peanut butter.  Definitely a great taste and easy to prepare!

I am happy to say that one of my children has been finishing most of the meals.  This leads to the problem of needing to provide a dessert most days.  Personally, I didn't grow up with desserts very often, but have gained the habit (thanks to my husband) of enjoying something sweet after the evening meal.

Between the children consuming more desserts after our evening meal and my lack of self-control, I have opted to look for some healthy-ish desserts.  My husband would call them snacks, but the kids love them just the same.  I've tried a few granola bars recently (will share more later) and have been very pleased.  Today I'm sharing an oatmeal bar that is rather tasty; I found the original recipe here.

Just a quick note: The first time I made these they were rather great.  This post was already typed and ready to share when I made another batch yesterday.  They weren't quite as wonderful, but still good.  Definitely crumbly though.

Chocolate Peanut Butter Oatmeal Bars
1 cup butter
1 cup brown sugar
4 cups quick oats
1 cup chocolate chips
1/2 cup peanut butter

Melt the butter and mix well with the brown sugar and oatmeal.  Press firmly into a 9x13 pan.

Bake at 400° for 10 minutes.   
While baking the bars, melt the chocolate chips and peanut butter in a saucepan over low heat.  Spread over baked layer.  Chill and cut into bars.

Please Note
~ The chocolate does get a bit messy at room temperature.  
~ These are quick, easy, and satisfying.  
~ Though there is a cup of sugar, there are four cups of oatmeal.  Not too awful.  And FLOUR-FREE!
~ I don't measure the peanut butter carefully.

    1. I realized the crumbs make great granola in yogurt! :) The kids loved it this morning!
