Chocolate Chip Bar Cookie Recipe

I ♥♥♥ chocolate chip cookies.  I have actually been on a hunt for a chocolate chip cookie that my husband and I both love for years, but I fear that it does not exist.  He has his criteria, and I have mine.  However, there are plenty of good recipes out there that we both enjoy.  UPDATE: We BOTH ♥♥ this Chocolate Chip Cookie recipe

Having just had a baby (a rather fussy baby at that), I rarely have time to bake.  But we sure do love having cookies in our freezer.  I found a giant cookie recipe, and I just had to try it.  The first time I made it, I used my pizza baking sheet.  It made a 12 inch cookie.  Later that same week, I needed a cookie that would travel well.  I turned the same recipe into a bar cookie.  DELICIOUS both times!!  Below are my adjustments for our preferences.  Click the link for the original recipe.

This recipe is definitely a keeper for the taste and ease!  It does make a smallish batch if you have a lot of people to feed, but delicious!
Chocolate Chip Bar Cookies
1 1/2 c all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 c butter, softened
1/3 c sugar
1/3 c brown sugar
1 egg
1 tsp vanilla
1/2-3/4 c mini semi-sweet chocolate chips
1/3 c peanut butter chips

1. Preheat oven to 350° and prepare pan with cooking spray.
2. In a small bowl, mix flour, baking soda, and salt. 
3. In a large bowl, beat together butter and sugars until creamy.  Add egg and vanilla.  Beat well.  
4. Add flour mixture to sugar mixture and mix well.  
5. Stir in chocolate and peanut butter chips.

Spread in a 11x7 baking pan.  (I actually used a 9x13 and only used 2/3 of the pan.  It still worked well.)  Bake for 25-35 minutes until edges are golden brown.
