Chicken Tacos {Slow-Cooker}

Tacos are easy, and each family personalizes them to their own preferences.  We eat both beef tacos (prepared traditionally on the stove top) and chicken tacos.  Chicken tacos are incredibly easy to prepare in the Crockpot.

Last month when I made chicken tacos for our family, I also gave a friend a few meals of it to a friend who recently had a baby.  Her family enjoyed standard tacos, and then she used leftovers to make a chicken chili.  I thought that was rather clever.  She asked for the recipe which motivated me to place it here.

Chicken Tacos
2-4 chicken breasts
1/2 cup chicken broth (or water)
taco seasoning (If you use four chicken breasts, you might want to double up on the spices.)
corn, if preferred
taco shells 
taco toppings

Prepare crock insert with cooking spray.  Place chicken breasts in crock.  Warm the chicken broth and stir in taco seasoning.  Pour over chicken breast.  Cook for 4-5 hours on the low setting.

Twenty minutes prior to serving, shred meat with forks and add corn.  (I use frozen corn, but if using canned, be sure to drain it.)  Serve on taco shells using a slotted spoon and top as desired.

Need longer?  Use frozen breasts and cook on low for about 7 hours.  You may have more liquid though.

This actually makes a good deal of chicken tacos meat.  It freezes wonderfully, too.
