Homemade Cream of Chicken Soup

With all the recipes out there that suggest using cream of chicken soup, it's nice to have a few cans on hand or a recipe to make condensed soup yourself.  Maybe you don't have any on hand and need to make some.  Possibly you are trying to eliminate processed foods from your diet.  Either way, this recipe will help you!

I was excited when Krista from Cornrows and Meadows posted a basic recipe, with adaptations, for a variety of homemade condensed soups.  I tend to only use cream of chicken soup in my cooking, so that is what I'm sharing here.

Homemade Cream of Chicken Soup
3 tablespoons butter
3 tablespoons flour
1/4 teaspoon salt
1/2 cup chicken stock or broth
1/2 cup milk
1/4 teaspoon poultry seasoning or sage
Bits of cooked chicken, if desired


Melt butter in a saucepan.  Stir in flour and salt until hot and bubbly.  Slowly whisk in broth, milk, and seasoning.  Continue cooking until it is thick and smooth.  Stir often.  Stir in chicken.

Need gluten free cream of chicken soup? I've been told you can use organic cornstarch or xanthan gum. However, I have not tried this or consulted with my gluten-free friends.

  1. This is awesome! I've been wanting to make our own condensed soups, because even generic is SO expensive now! We use a good bit of cream of mushroom in cooking. Jonathan thinks it's the grossest thing ever, but I LOVE plain old cream of mushroom soup with crackers. I definitely want to give that one a try.
