Caramel Apple Dip Recipe

Since Little Sis's arrival in October, I have really struggled to eat much at lunch.  Taking the time to eat a piece of fruit just didn't happen.  (I promise I feed my children better than myself!)

This is also a quick and easy way to serve guests fruit or motivate someone to eat fruit.  When I have friends over, I like to make some, especially since we typically have lots of apples on hand.
One day I realized just how long it had been since I had a raw piece of fruit, other than at dinner.  To motivate me to eat more fruit, or at least apples, I made up a quick batch of apple dip.  (Pictured above is just a small bit of the full recipe.)
Apple Dip

8 oz cream cheese, softened
¾ cup brown sugar
¼ cup butter
1 tsp vanilla

Heat butter, cream cheese, and sugar to a boil over medium heat, stirring constantly until smooth.  

Remove from heat and add vanilla.  Stir well.  Serve warm or cold with fruit.

I definitely recommend using a whisk to remove lumps faster than a spoon or scraper.    The dip can be used cold on firm fruits, but I prefer it warm.  (It does warm in the microwave nicely, just keep an eye on it.  It only takes a few seconds at 70% heat.)
